Kumara Chickpea Muffins
Getting veges into my 2 year old is starting to become more of a challenge lately. So I decided to try hiding them and created this recipe. Turns out, yes he will eat them hidden and he loved these muffins! Success!
Chickpeas are a wonderful source of plant protein and are full of nutrients, such as folate (which is the natural non-synthetic type of folic acid), iron, phosphorus, copper and manganese. They are also an excellent source of fibre and are low glycemic : which promotes healthy blood sugar management.
Keep your kids full and nourished with these!
1 cup chickpea flour
1 teaspoon baking powder
1 small grated kumara
1/2- 1 zucchini
1 teaspoon sea salt
1 teaspoon garlic powder
sprinkle of mixed herbs
1/4 cup coconut oil
2 eggs
1/2 a cup of unsweetened almond milk
Grate the vegetables, and add the other ingredients one by one to a bowl. Mix thoroughly so that the chickpea flour is completely mixed in. Pour into greased muffin tray and bake on 150 fan bake for 18-20 minutes.
